What is This?

I rarely feel like I can make contributions to the food world. But on a recent stay at Red Mountain Spa, St. George Utah, I was intrigued by what I thought was pumpkin butter. When I tasted it, the spread was familiar, but unrecognizable. The spread is peanut butter and cooked carrots pureed into a cream cheese like texture. The carrots make it sweet. It is just one more way to healthify the foods we love.

Imagine, a spa experience with hiking scenery extraordinaire, and I walk away with the desire to share the carrot-peanut -butter experience.

What are the proportions, and do you need to use natural peanut butter?
